Without a hitch

With Thanksgiving here and gone, I can reflect on the success of it.  I started cooking and baking Tuesday for the entire ordeal.  The amount of work that went into it was well worth the outcome.  I definitely slept poorly leading up to it but seeing my family and friends enjoy the meal, and the compliments, made me know I was not going to top this day.   The menu was huge.  My mother explained she would have tried to convince me to shorten it, but knew I wouldn't listen.   This is what I cooked.

Pumpkin rolls, Stromboli, Finger hot dogs, Lobster in herb mayo, Garlic mashed potatoes, Baked ham, Turkey, Sausage and mushroom stuffing, Kielbasa, Yankee pot roast, Spinach and meat lasagna, Perogies, Corn, Green Beans, Cranberry Sauce, Gingerbread pumpkin pie, Pumpkin cheesecake, Whoopi pies, and Apple pie.

It was a lot.  About fourteen people total attended.  Leftovers were kept to a minimum.  The food was well enjoyed. I felt like I actually accomplished something that my family would remember.  The best part though was not the food.  When we all sat down, we all smiled. We gave our thanks for the year prior before one bite occurred at the table.  I was thankful for my children, for my dear friend who has seen me through these past few years of my life, for the gifts and talents I have been granted to share with others, and most of all the love I have for this life here on earth.  I am part of life again.  I feel like it's just starting where each smell, touch, taste, sound and sight brings wonder of how the world works around me. 

I am at peace and I am most thankful for that.
